Jam Roll Ups



Tired of the high fat content in Peanut Butter? Try these.

Jam (your flavor)
Slice of Bread
Fat Free Cream Cheese (softened)

Spread the Cream Cheese from "stem to stern." Top lightly with jelly. Roll up bread and stick through with a tooth pick.

Healthy sides: String Cheese, a Peach, Celery Sticks.

Lunch Box Mini Pizza's





Pepperidge Farm Deli Flats
Can of Pizza Sauce
Cooked Sausage or ground beef
Grated Cheese

Split your Deli Flats in half. Lay them face down on a Cookie Sheet. Broil for 1-2 minutes, just 'til starting to toast.
In a saucepan, mix together Pizza sauce and cooked meat, just 'til heated through.
Put a generous portion of the meat mixture on top of the deli flats and top with cheese. Bake until cheese is bubbly.
If you aren't going to send these in a lunch immediately, they should be popped in the freezer!

Healthy sides - carrot sticks, apple, and a lowfat gogurt!

I have been away for a long while... those school lunches are LONG overdue. I can't explain the circumstances, but I hope you all will try to forgive me!

Back to School



With the upcoming school year right around the corner, I will be posting some different school lunch ideas. Feel free to share any ideas you might have.

Homemade Hamburger Helper




1 lb Macaroni
1 lb ground beef
1 pkg taco seasoning
2 Tablespoons butter
1/4 cup flour
1/2 cup hot water
1/2 cup milk
1 chicken bullion

Cook macaroni according to package directions.
Cook ground beef and drain grease, mix in taco seasoning.
Dissolve bullion in hot water to make broth. Meanwhile melt butter over medium-low heat. Stir in flour. As butter and flour thickens, mix in 'broth' and milk. Cook over low heat for a 2 minutes.
In large pan, stir together, beef, macaroni, and cream mixture. Serves 6

If you wish, you may toss in some grated cheddar. I think it is good without the cheese.

Perfect Noodles



1 egg
1/2 egg shell full of milk
1 cup Flour

In a medium sized bowl, mix egg and milk. Work in flour. Dough should not be sticky. If necessary, work in more flour.
If you have a pasta maker, proceed by rolling into strips, then cutting into desired width.
If you do not have a pasta maker, form into a circle, sprinkle with flour, and roll with a rolling pin. Then cut into desired width with a knife or pizza cutter.
Separate noodles and place into boiling liquid. Cook until tender -about 15-18 minutes.
This makes wonderful chicken or beef and noodles.
Each recipe serves about 2 people.
